Barbecued chilli prawns with fresh mango salad

This delicious dish is best made from juicy mangos and fresh king prawns - a real summer delight.

Ingredients

Mango salad
  • 2 large mangoes (1.2kg), chopped coarsely
  • 1 red onion (100g), sliced thinly
  • 1 fresh long red chilli, seeded, sliced thinly
  • 1 1/2 cup (120g) bean sprouts
  • 1/2 cup coarsely chopped fresh coriander
  • 2 teaspoon fish sauce
  • 2 teaspoon grated palm sugar
  • 2 tablespoon lime juice
  • 1 tablespoon peanut oil
Barbecued chilli prawns
  • 1 kilogram uncooked large king prawns
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon chilli powder
  • 2 teaspoon sweet paprika
  • 2 clove garlic, crushed

Method

    Place ingredients for mango salad in medium bowl; toss gently to combine.

    Shell and devein prawns, leaving tails intact. Combine turmeric, chilli, paprika and garlic in large bowl, add prawns; toss prawns to coat in chilli mixture.

    Cook prawns, in batches, on heated oiled grill plate (or grill or barbecue) until browned lightly. Serve prawns with salad.
