Banana pancakes with choc-peanut sauce

Fluffy buttermilk pancakes containing slices of fresh banana and topped with a rich chocolate peanut sauce made from melted Snickers bars.

  • 1 cup (150g) self-raising flour
  • 2 tablespoons caster sugar
  • 1¼ cups (310ml) buttermilk
  • 1 egg, beaten lightly
  • 2 teaspoons pure maple syrup
  • 20 grams butter, melted
  • 1 medium banana (200g), sliced thinly
  • ½ cup (125ml) pouring cream
  • 2 60g Snickers bars, chopped coarsely
  • 2 cups (500ml) chocolate ice-cream

    Sift flour into a large bowl, stir in sugar. Whisk in combined buttermilk, egg, syrup and butter until batter is smooth. Stir in banana.

    Heat a large oiled frying pan over medium heat. Pour ¼ cup of the batter into pan, allowing room for spreading. Cook for 2 minutes or until bubbles appear on surface of the pancakes. Turn pancakes; cook for 2 minutes or until browned. Remove from pan, cover to keep warm. Repeat with remaining batter to make a total of 8 pancakes.

    Meanwhile, heat cream in a small saucepan, add Snickers; stir over low heat until melted.
