Banana maple friands
These delectably sticky friands are moist and and incredibly moreish. Enjoy them on their own, or with a generous dollop of thickened cream.

Banana maple friands
- 1 cup (140g) pecans
- 2 large ripe bananas
- 6 eggwhites, lightly whisked
- 180 gram unsalted butter, melted, cooled
- 1 1/2 cup (240g) icing sugar mixture
- 1/2 cup {75g) plain flour
- 1/3 cup (80ml) maple syrup
- 1 teaspoon ground cinnamon
Method
Banana maple friands
- 1Preheat oven to 180C or 160C fan. Grease a 12-hole, 1/2-cup friand pan. Place on a baking tray.
- 2Place pecans in a food processor. Process until fine. Transfer to a bowl. Mash one banana in a bowl and add to ground pecans along with eggwhite, butter, icing sugar, flour, 2 tbsp of maple syrup and cinnamon. Mix well.
- 3Spoon banana mixture into pans. Thinly slice remaining banana and arrange on top.
- 4Bake for 20 minutes until golden and a skewer inserted into centre comes out clean. Stand in pans for 5 mins before transferring to a wire rack to cool. Drizzle with remaining maple syrup.
