Banana caramel sundae
  • 70 gram (2½ ounces) dark eating (semi-sweet) chocolate, chopped finely
  • 2/3 cup (70g) roasted walnuts, chopped coarsely
  • 1 litre (4 cups) vanilla ice-cream
  • 4 bananas (800g), chopped coarsely
  • 100 gram (3 ounces) butter
  • 1/2 cup (125ml) pouring cream
  • 1/2 cup (110g) firmly packed light brown sugar

  • 1
    Divide one-third of the sauce among six ¾-cup (180ml) glasses; divide half the chocolate, nuts, ice-cream and banana among glasses.

    To make the caramel sauce: Stir ingredients in small saucepan over low heat until sugar dissolves; bring to the boil. Reduce heat; simmer, uncovered, 5 minutes. Cool.

    Repeat layering process, ending with a layer of sauce.
