Banana and salted caramel sauce stacks

Bananas and homemade salted caramel sauce - it's a match made in heaven! This easy recipe will be ready in just 20 minutes for the perfect quick dessert to finish any meal.

Banana and salted caramel sauce stacks
  • 300 millilitre thickened cream
  • 1 cup firmly packed brown sugar
  • 60 gram butter, chopped, plus 40g extra, at room temperature
  • 1/2 teaspoon sea salt flakes
  • 400 gram madeira cake, cut into 8 slices
  • 2 bananas, sliced
  • 1/3 cup chopped walnuts

    Combine cream, sugar, butter and salt in a heavy-based saucepan; cook and stir for 2 minutes over low heat or until sugar dissolves. Increase heat. Bring to the boil. Reduce heat; simmer, stirring occasionally, for 5 minutes or until sauce thickens slightly.

    Meanwhile, melt the extra butter in a large frying pan over moderate heat. Cook the cake slices, in batches, for 1 minute each side or until browned and heated. Transfer to a heat-proof plate; cover to keep warm.

    To serve, place a piece of cake on each serving plate. Top with banana and remaining cake. Drizzle with caramel sauce. Serve sprinkled with walnuts.


No Madeira cake? You can use bought pikelets instead.
