Baked paella

Ingredients

Baked paella
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1/2 small capsicum, seeded, chopped
  • 125 gram halved sliced salami
  • 300 gram chicken thigh fillets, cut into 1cm slices
  • 2 chopped tomatoes
  • 3 clove garlic, crushed
  • 2 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 pinch dried chilli flakes
  • 2 cup arborio rice
  • 2 1/2 cup chicken stock
  • 1 lemon, sliced
  • 1/4 cup black olives
  • chopped parsley, to serve

Method

Baked paella

    Preheat oven to hot, 200°C. Grease an 8-cup ovenproof dish.

    Heat oil in a large heavy based saucepan over high heat. Sauté onion, capsicum and salami for 2-3 minutes, until onion is tender and salami turns golden. Add chicken and cook 3-4 minutes, until well browned.

    Stir in tomatoes, garlic and spices and cook 1 minute, until fragrant. Mix in rice and stock. Bring to boil. Transfer to dish and season.

    Cover with foil and bake 30 minutes. Top with lemon and olives. Bake, uncovered, another 5-10 minutes, until rice is tender. Sprinkle with parsley to serve.
