Baked apples with butterscotch sauce

Stuffed with chopped pecans and drizzled in a butterscotch sauce, these buttery apples make a heavenly dessert.

Method

1.Preheat oven to 180°C/350°F.
2.Core unpeeled apples about three-quarters of the way down from stem end, making hole 4cm (1½ inches) in diameter. Use small sharp knife to score around centre of each apple. Stand apples upright in small ovenproof dish.
3.Place one cube of butter and a teaspoon of brown sugar in cavity of each apple; pack nuts firmly into apple cavity. Divide remaining butter and sugar among apples; sprinkle extra sugar around apples.
4.Bake 45 minutes. Stir cream into dish; bake about 10 minutes. Transfer apples to serving bowls. Whisk cream in dish briefly; drizzle over apples.

We used Golden Delicious apples for this recipe; they are a crisp almost citrus-coloured apple with an excellent flavour and good keeping properties. It’s probably the best cooking apple around but you can substitute it with green-skinned Granny Smiths, another good cooking apple. Recipe is not suitable to freeze.
