Baby spinach and parmesan salad

You can add thin slices of ripe but firm pears to this classic baby spinach and parmesan salad.

  • 100 gram (3 ounces) baby spinach leaves
  • 50 gram (1½ ounces) shaved parmesan cheese
  • 1 tablespoon toasted pine nuts
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon olive oil

    Place baby spinach leaves, parmesan cheese and toasted pine nuts in a large bowl. Combine balsamic vinegar and olive oil in a screw-top jar; shake well, season to taste. Drizzle dressing over salad; toss gently to combine.
