Avocado and feta toasties
- 2 tablespoon balsamic vinegar
- 2 tablespoon olive oil
- 2 clove garlic, crushed
- 8 medium plum tomatoes (600g), halved
- 8 x 1cm-thick slices walnut bread, toasted
- 1 medium avocado, sliced thinly
- 250 gram (8 ounces) feta cheese, crumbled
- 30 gram (1 ounce) baby rocket leaves (arugula)
Method
Avocado and feta toasties
- 1Preheat oven to 240°C/475°F. Combine vinegar, oil and garlic in small bowl. Place tomato, cut-side up, in medium baking dish; drizzle with vinegar mixture. Roast about 25 minutes.
- 2Top toast with avocado, cheese, rocket and roasted tomato, then drizzle with pan juices.
