Avocado and feta toasties

Topped with juicy roasted tomato, these easy toasties make a divine brunch, lunch or lazy mid-week dinner.

Avocado and feta toasties
  • 2 tablespoon balsamic vinegar
  • 2 tablespoon olive oil
  • 2 clove garlic, crushed
  • 8 medium plum tomatoes (600g), halved
  • 8 x 1cm-thick slices walnut bread, toasted
  • 1 medium avocado, sliced thinly
  • 250 gram (8 ounces) feta cheese, crumbled
  • 30 gram (1 ounce) baby rocket leaves (arugula)

    Preheat oven to 240°C/475°F. Combine vinegar, oil and garlic in small bowl. Place tomato, cut-side up, in medium baking dish; drizzle with vinegar mixture. Roast about 25 minutes.

    Top toast with avocado, cheese, rocket and roasted tomato, then drizzle with pan juices.
