Ingredients
1 tablespoon vegetable oil
150 gram cup mushrooms, sliced
2 green onions, white and green parts chopped separately
300 gram baby spinach
1 tablespoon tamari
1 tablespoon sesame seeds
2 teaspoon sesame oil
1 tablespoon rice wine vinegar
cooked soba noodles, to serve
Method
1. Heat oil in a large wok on high. Stir-fry mushroom and white of onions 2-3 minutes, until tender.
2. Add spinach, green of onions, tamari, seeds and oil. Stir fry 1-2 minutes, until just wilted. Toss vinegar and cooked noodles through.
Accompany with a little extra tamari – a Japanese soy sauce, made without wheat.
