Asian spinach noodles

Perfect as a light vegetarian dinner or a delicious side for a larger Asian banquet, this warm and flavour-packed spinach and mushroom noodle dish is super tasty.

Asian spinach noodles
  • 1 tablespoon vegetable oil
  • 150 gram cup mushrooms, sliced
  • 2 green onions, white and green parts chopped separately
  • 300 gram baby spinach
  • 1 tablespoon tamari
  • 1 tablespoon sesame seeds
  • 2 teaspoon sesame oil
  • 1 tablespoon rice wine vinegar
  • cooked soba noodles, to serve

    Heat oil in a large wok on high. Stir-fry mushroom and white of onions 2-3 minutes, until tender.

    Add spinach, green of onions, tamari, seeds and oil. Stir fry 1-2 minutes, until just wilted. Toss vinegar and cooked noodles through.


Accompany with a little extra tamari - a Japanese soy sauce, made without wheat.
