Asian pork and pineapple salad

Embracing the classical sweet and sour Asian flavours or pork and pinapple in this beautifully fresh Summer salad.

Ingredients

Dressing
  • 2 tablespoon sweet chilli sauce
  • 1 1/2 tablespoon soy sauce
  • 1 tablespoon peanut oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, crushed
Asian pork and pineapple salad
  • 1 small pineapple, peeled and cut into thin strips
  • 2 cup bean sprouts
  • 1 red capsicum, seeded and thinly sliced
  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 1/2 cup toasted cashews
  • 1 tablespoon peanut oil
  • 500 gram pork fillet, thinly sliced
  • 1 garlic clove, crushed
  • 1 tablespoon hoisin sauce

Method

Asian pork and pineapple salad

    ln a large bowl, combine pineapple, bean sprouts, capsicum, mint, coriander and cashews. Set aside.

    Heat oil in a wok or large frying pan on high. Stir-fry pork and garlic for 2 minutes until browned. Add sauce and stir-fry for 1 minute.

    Dressing: Whisk all ingredients together in a small jug.

    Add pork and Dressing to salad. Toss gently and serve.

Notes

Step 1 of salad can be prepared ahead of time. chill until required.
