  • 1/4 cup (60ml) olive oil
  • 2 fresh small red thai chillies, chopped finely
  • 1 litre (4 cups) napoletana sauce (page 48)
  • 1/2 cup coarsely chopped fresh flat-leaf parsley

Method

    Heat half of the oil in large saucepan; cook chilli, stirring, 2 minutes. Add sauce; bring to a boil. Stir in remaining oil and parsley.
