Ingredients
Apricot muesli bars
- 125 gram butter, chopped
- 1/2 cup (110g) firmly packed brown sugar
- 2 tablespoon honey
- 1 1/2 cup (135g) rolled oats
- 1/4 cup (40g) sunflower seeds
- 1/3 cup (25g) desiccated coconut
- 1/2 tablespoon ground cinnamon
- 1/2 cup (75g) finely chopped dried apricots
Method
Apricot muesli bars
- 1Preheat oven to 180°C. Grease a deep 20cm square cake pan; line base and sides with baking paper, extending the paper 5cm over edges.
- 2Stir butter, sugar and honey in a medium saucepan over low heat until sugar is dissolved. Stir in oats, sunflower seeds, coconut, cinnamon and apricots. Press mixture into pan.
- 3Bake slice for 35 minutes or until firm to touch. Mark into 15 bars while warm; cool in pan. Cut when cold.
Notes
This slice can be stored in an airtight container for up to 1 week.
