Apricot muesli bars

A delicious lunchbox filler, these sweet apricot muesli bars will be a hit with kids and adults alike.

Ingredients

Apricot muesli bars
  • 3 cup natural fruit muesli
  • 3/4 cup self-raising flour
  • 2/3 cup dried apricots, chopped
  • 1/3 cup desiccated coconut
  • 180 gram butter
  • 1/2 cup brown sugar
  • 1/4 cup honey

Method

    Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.

    In a large bowl, combine muesli, flour, apricots and coconut.

    In a small saucepan, combine butter, sugar and honey. Stir over low heat, until melted and smooth.

    Make a well in dry ingredients. Pour in butter mixture, mixing well. Press evenly and firmly into pan, using a fork (see tip).

    Bake for 12-15 minutes, until golden brown. Cool in pan. Cut into bars. Store in an airtight container.

Notes

It is important to press mixture firmly into pan, to help prevent it crumbling.
