1.Preheat oven to 200°C/400°F. Grease 6-hole (¾-cup/180ml) texas muffin pan holes.
2.Sift flour, soda, spices and brown sugar into large bowl. Stir in pie apple, then egg, milk and butter; mix until just combined. Spoon mixture into pan.
3.Peel, core and halve apple; slice each half thinly. Place an apple slice on top of each muffin, brush with extra butter, sprinkle with cinnamon sugar.
4.Bake muffins about 25 minutes. Serve warm or cooled.
