Ingredients: 2 cup cucumber juice; 1 1/3 cup pimm's no 1; 1.5 litre (6 cups) chilled sparkling apple juice; 1 cup ginger wine; 1 thinly sliced lebanese cucumber; 1 thinly sliced red apple; 1 cup loosely packed fresh mint leaves; ice, to serve

Ingredients

2 cup cucumber juice

1 1/3 cup pimm's no 1

1.5 litre (6 cups) chilled sparkling apple juice

1 cup ginger wine

1 thinly sliced lebanese cucumber

1 thinly sliced red apple

1 cup loosely packed fresh mint leaves

ice, to serve

Method

1.Combine all ingredients in a large bowl. Serve over ice.

Juice about 800g peeled cucumbers in a juicer separator. Or, puree peeled cucumber in blender or processor. Strain into a jug and discard the solids. Pimm’s No 1 is a gin-based alcohol flavoured with herbs.
