Apple and cinnamon muffins

Ingredients

Apple and cinnamon muffins
  • 1 2/3 cup (250g) self-raising flour
  • 1 cup (70g) bran cereal
  • 3/4 cup (150g) brown sugar
  • 3/4 teaspoon ground cinnamon
  • 2 medium (300g) red apples
  • 1 ripe banana, mashed
  • 1/3 cup (80ml) vegetable oil
  • 1 egg
  • 3/4 cup (180ml) buttermilk
  • 2 teaspoon raw caster sugar

Method

    Preheat oven to 180°C (160°C fan-forced). Line a 12-hole, 1/3-cup muffin pan with paper muffin cases.

    Combine flour, bran cereal, brown sugar, and 1/2tsp cinnamon and stir to combine. Peel and grate one of the apples, then toss through the dry ingredients with the banana.

    In a separate bowl, whisk together oil, egg and buttermilk. Pour liquid ingredients over dry ingredients and stir until they have just come together. Do not over-mix, mixture should be lumpy. Spoon batter into the prepared muffin cases.

    Slice remaining apple into thin slices. In a small bowl, combine remaining cinnamon and the sugar. Top each muffin with a slice of apple and a sprinkle of cinnamon sugar.

    Bake, 20 to 25 minutes, or until the muffins are cooked through. Remove to a wire rack and allow to cool.

    Store in an airtight container in the refrigerator.
