Apple almond cake

This divine apple cake has a crunchy almond topping and goes beautifully with a morning or afternoon cuppa.

Apple almond cake
  • 125 gram butter
  • 2/3 cup caster sugar
  • 2 eggs
  • 1/2 cup self-raising flour
  • 1/2 cup plain flour
  • 1/3 cup milk
  • 1 apple, grated
  • 1/4 cup slivered almonds

    Preheat oven to 180°C. Grease a deep 20cm round cake pan, line base with paper; grease paper.

    Cream butter and sugar in small bowl with electric mixer until light and fluffy; beat in eggs one at a time, beat until combined.

    Transfer mixture to large bowl, stir in half the sifted flours with half the milk, then stir in remaining flour and milk, stir until smooth.

    Spread into prepared pan, sprinkle with apple and almonds, bake for about 45 minutes. Stand 5 minutes before turning on to wire rack to cool.
