Ingredients
375 gram angel hair pasta
1/4 cup (60ml) olive oil
250 gram asparagus, trimmed, chopped coarsely
150 gram smoked salmon, sliced thinly
2 tablespoon rinsed, drained baby capers
1/3 cup finely chopped fresh chives
75 gram baby rocket leaves
1 lemon, cut into wedges
Method
1. Cook pasta in large saucepan of boiling water until tender; drain. Return pasta to pan.
2. Meanwhile, heat oil in small frying pan; cook asparagus, stirring, until tender.
3. Add asparagus, salmon, capers, chives and rocket to pasta; toss to combine. Serve pasta with lemon wedges.
