For those evenings when you need something tasty for dinner in double quick time, this delicious angel hair pasta with smoked salmon and asparagus can be on your table in under 15 minutes.

Ingredients

Angel hair pasta with smoked salmon & asparagus
  • 375 gram angel hair pasta
  • 1/4 cup (60ml) olive oil
  • 250 gram asparagus, trimmed, chopped coarsely
  • 150 gram smoked salmon, sliced thinly
  • 2 tablespoon rinsed, drained baby capers
  • 1/3 cup finely chopped fresh chives
  • 75 gram baby rocket leaves
  • 1 lemon, cut into wedges

Method

    Cook pasta in large saucepan of boiling water until tender; drain. Return pasta to pan.

    Meanwhile, heat oil in small frying pan; cook asparagus, stirring, until tender.

    Add asparagus, salmon, capers, chives and rocket to pasta; toss to combine. Serve pasta with lemon wedges.
