- 3 3/4 cups (600g) sultanas
- 2 cup (320g) dried currants
- 2 1/2 cups (375g) raisins, chopped coarsely
- 2 cup (280g) seeded dates, chopped coarsely
- 1 3/4 cups (350g) dried figs, chopped coarsely
- 1 1/2 cup (375ml) brandy, port or dark rum
- 1/2 cup (100g) red glacé cherries, quartered
- 1 cup (250g) glacé fruit (such as pineapple, apricot, peach), chopped coarsely
Method
2-in-1 basic fruit mix
- 1Combine the dried fruit in a large bowl. Heat the brandy in a small saucepan over medium heat until hot, do not boil. Remove from heat and pour over the fruit; stir to combine.
- 2Cover tightly with plastic wrap; stand at room temperature for 24 hours or store in a cool, dark place for up to a week, stirring every day.
- 3Stir in the glacé fruit.
