A good pudding or Christmas cake relies on a nice boozy fruit mix. This recipe has the perfect balance and also serves as a delicious filling for your fruit mince pies.
1.Combine the dried fruit in a large bowl. Heat the brandy in a small saucepan over medium heat until hot, do not boil. Remove from heat and pour over the fruit; stir to combine.
2.Cover tightly with plastic wrap; stand at room temperature for 24 hours or store in a cool, dark place for up to a week, stirring every day.
3.Stir in the glacé fruit.
This quantity of basic fruit mix will make a classic Christmas cake or classic steamed Christmas pudding.
