Method

1.Peel eggplant, cut into thin strips, place in top half of steamer, cook over boiling water for about 8 minutes or until just tender, drain.
2.Grind coriander, peppercorns and garlic to a paste using mortar and pestle. Combine paste with sugar, sauce, chilli, oil and juice in large bowl. Stir in eggplant, cover, stand 20 minutes.
3.Soak shrimp in cold water in bowl for 10 minutes, drain. Pound shrimp with mortar and pestle. Serve salad sprinkled with shrimp and onion.
