Method

1.Squeeze excess moisture from grated zucchini. In a large bowl, combine zucchini, nuts, egg, parsley, rice and breadcrumbs.
2.Shape into six burgers; toss in flour; shake off excess flour. In a large frying pan, heat oil on medium heat; cook burgers for 3-4 minutes, or until browned.

Burgers can be prepared 3 hours ahead and refrigerated, covered.
