Sweet chilli and coriander prawns

Perfect for parties, serve these simple sweet chilli and coriander prawn skewers with lime wedges and plenty of napkins.

1.Shell and devein prawns, leaving tails intact.
2.Combine prawns, sauce, juice and coriander in large bowl; toss to coat in mixture.
3.Thread prawns onto bamboo skewers. Cook skewers on heated oiled grill plate (or grill or barbecue) until prawns just change colour. Accompany with lime slices, if you like.

Soak bamboo skewers in cold water for at least 30 minutes to stop them from burning during cooking, or wrap the ends in foil. Sweet chilli sauce originates in Thailand. It is a thin sauce made with red chillies, sugar, garlic and vinegar widely and is used to add a little bit of bite to your cooking. It is mild enough to recommend for kid’s meals.
