Spinach, fetta and pine nut salad


Lemon dressing


1.Combine spinach, mint and dill in medium bowl.
2.To make lemon dressing, remove rind from lemon in long thin strips; place in small heatproof bowl. Add enough boiling water to cover rind; drain. Repeat process two more times. Remove remaining skin and pith from lemon. Segment flesh over small bowl to catch juice; coarsely chop flesh. Add well-drained rind and flesh to bowl with juice; add remaining ingredients, season to taste.
3.Just before serving, add cheese, nuts and dressing; toss gently to combine.
