Method
1.Cut tofu into 1cm cubes. Cut onion in half, cut into thin slices. Cut carrot and capsicum into thin strips.
2.Combine tofu, onion, carrot, capsicum and dressing in bowl, mix well. Cover, refrigerate 3 hours. Serve salad sprinkled with peanuts.
3.To make dressing. Combine ingredients in a screw-top jar, shake well.
