Quick hamburger relish

2 Cup




1.Preheat oven to 200°C (180°C fan forced).
2.Quarter capsicum, discard seeds and membranes. Roast capsicum, skin-side up, until skin blisters and blackens. Cover capsicum with plastic or paper for 5 minutes, peel away skin then chop coarsely.
3.Heat oil in large saucepan, cook onion and garlic, stirring, until onion softens. Add remaining ingredients, stir over high heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat, simmer, uncovered, stirring occasionally, about 15 minutes or until relish is thick.
4.Spoon hot relish into hot sterilised jars, seal immediately. Label and date jars when cold.
