Method

Quail with radicchio and pear salad

1.Using kitchen scissors, cut along sides of each quail’s backbone; discard backbones. Halve each quail along breastbone. Place 2 sage leaves on each quail half; wrap with slice of prosciutto.
2.Heat oil in large frying pan; cook quail, in batches, about 10 minutes or until cooked.
3.Meanwhile, segment grapefruit over small bowl; reserve 1 tbsp of juice for dressing.
4.Make balsamic dressing.
5.Heat butter in medium frying pan; add pear, cook about 4 minutes or until tender.
6.Divide radicchio, grapefruit and pear between serving plates; top with quail, drizzle with dressing.

7.Combine vinegar, oil, garlic and reserved grapefruit juice in screw-top jar; season, shake well.
