Method

1.Shell and devein prawns, leaving tails intact.
2.Blend or process garlic and rocket until rocket is chopped, add cheese. With motor operating, gradually pour in oil, in a thin steam, until combined.
3.Transfer pistou to small bowl, add juice; cover surface with plastic wrap until ready to serve, to prevent discolouration.
4.Serve prawns with pistou.

For a milder pistou, substitute flat-leaf parsley for half of the rocket.
