Method

1.Boil, steam or microwave baby new potatoes until tender; drain. Mash about half the potatoes with sour cream and softened butter in a large bowl until smooth.
2.Using the back of a fork or a potato masher, gently crush remaining potatoes until skins burst and flesh is just flattened; fold into mash mixture.
3.Season to taste. Sprinkle with coarsely chopped fresh flat-leaf parsley.
