1.Make balls from half a honeydew and rock melon, combine in colander with bocconcini and mint leaves. Refrigerate.
2.Combine olive oil and lemon juice in small bowl. Just before serving, place melon mixture in large bowl with prosciutto and dressing, toss gently to combine. Spoon into twelve ⅔ cup (160ml) glasses.
