Lunchtime roll-ups

1.Cut crusts from bread. Lightly butter 3 bread slices, then spread with Vegemite and sprinkle with grated cheese. Roll up cheese and Vegemite slices firmly, wrap in plastic wrap.
2.Spread remaining 6 bread slices with cream cheese, top 3 slices with grated carrot and the remaining 2 slices with celery strips. Roll up carrot and celery-topped slices firmly and wrap in plastic wrap.
3.Refrigerate rolls for at least 1 hour. Unwrap chilled rolls and cut in half. Pack rolls, cut-side up, in a lunch container, cover and keep chilled until required.

Sandwiches can be prepared several hours ahead. Keep wrapped in plastic wrap in the refrigerator until required. Bread is an excellent source of energy-giving carbohydrates. Wholemeal and wholegrain breads are also a rich source of dietary fibre and other nutrients because they contain the natural goodness of the entire grain.
