1.Trim all visible fat from lamb. Cut lamb into cubes, toss in flour.
2.Heat oil in large saucepan, cook onion until soft. Add lamb, cook until browned all over. Stir in cinnamon and turmeric, cook 1 minute.
3.Stir in the water, stock and prunes, bring to a boil. Reduce heat, simmer, covered, about 30 minutes or until lamb is tender.
4.Meanwhile, make couscous. Combine the water and couscous in medium bowl, stand 5 minutes or until liquid is absorbed, fluffing with fork occasionally.
5.Serve lamb with couscous, sprinkle with coriander.
