Lamb and feta salad with warm walnut dressing

Warm and tender lamb fillets are dressed with a warm citrusy walnut dressing and served on a bed of crunchy witlof and baby spinach to make this delicious salad.

Warm walnut dressing


1.Heat oil in large frying pan; cook lamb, uncovered, about 10 minutes. Cover; stand 5 minutes then slice thickly.
2.Make warm walnut dressing. Stir oil, vinegar, rind and garlic in small saucepan over medium heat until hot. Remove from heat; stir in nuts.
3.Place lamb in medium bowl with witlof, cheese and spinach; toss gently to combine. Serve salad drizzled with dressing.
