Italian blt



1.Place tomato in medium bowl with vinegar, basil and 1 tablespoon of the oil, toss tomato to coat in mixture.
2.Cook tomato and pancetta on heated oiled grill plate (or grill or barbecue) until tomato is browned and pancetta crisp.
3.Cut bread into quarters, split quarters in half horizontally, brush cut sides with combined garlic and remaining oil. Toast bread, cut-side down, on same grill plate.
4.Sandwich tomato, pancetta, bocconcini and rocket between bread pieces.

For a vegetarian alternative replace the pancetta with slices of grilled eggplant or sweet potato.
