Basil and lemon dressing


1.To make basil and lemon dressing blend or process ingredients until smooth. Season to taste.
2.Cut bread into 5mm thick slices and rub both sides with cut side of garlic, then brush with oil. Cook on a hot grill pan (or toast under grill) until browned lightly.
3.Combine tomato, cheese, toast, any remaining oil and dressing in a large bowl; toss to combine. Divide salad among 12 x 1-cup containers and sprinkle over extra fresh small basil leaves to serve, if you like

Regular extra virgin olive oil and ½ teaspoon finely grated lemon rind can be substituted for lemon-infused olive oil.
