1.Boil, steam or microwave potatoes until tender, drain. Mash potatoes in large bowl with cream and nutmeg until smooth. Add eggs and egg yolks, using wooden spoon, beat until smooth. Stir in flour, cheese, parsley and pepper.
2.Heat oil in large saucepan, deep-fry level tablespoons of mixture, in batches, until fritters are browned lightly. Drain on absorbent paper.

You can also use pink-eye or sebago potatoes for this recipe.
