Date and tamarind relish

The sweetness of the dates and the sourness of the tamarind combine to give you wonderful for a sandwich or burger condiment. It is packed full of flavour and spice to create a real taste sensation.

1.Combine tamarind and the water in medium heatproof bowl. Cover, stand 30 minutes. Strain tamarind over small bowl, pressing to extract all liquid, discard tamarind.
2.Heat oil in medium heavy-base saucepan, cook seeds, stirring, until they pop. Stir in dates, tamarind liquid and vinegar, bring to a boil. Simmer, uncovered, stirring occasionally, about 5 minutes or until mixture is almost dry. Blend or process mixture until almost smooth.
3.Spoon hot relish into hot sterilised jars, seal while hot.
