Method

1.Cut chicken into eight pieces.
2.Using a vegetable peeler, peel thin strips lengthways from carrots. Combine carrot, wombok, onion, sprouts and coriander, top with chicken.
3.Make sesame dressing, place ingredients in screw-top jar; shake well.
4.drizzle dressing over salad and chicken.

Each takeaway barbecued chicken we used in this chapter weighed about 900g; when skinned and boned, this results in 3 cups (480g) of shredded meat, or 2½ cups (425g) of coarsely chopped meat.
