Lemon cranberry dresing

Method

1.Combine the water and rind in medium saucepan, bring to the boil. Add chicken, simmer, covered, about 10 minutes or until chicken is cooked through. Cool chicken in liquid 10 minutes, drain. Slice chicken thinly.
2.Meanwhile, make lemon cranberry dressing. Combine ingredients in screw-top jar, shake well.
3.Combine chicken, dressing and remaining ingredients in large bowl.
