Method

1.In heated oiled medium frying pan, until cook shallots soft. Add tomato; cook, stirring, 5 minutes. Add vinegar and sugar; cook, stirring occasionally, until thickened. Season to taste.
2.Preheat grill.
3.Cut brioche loaf into 16 slices; cut 32 x 6.5cm rounds from slices. Top half the slices with cheese; grill until cheese melts. Toast remaining rounds until golden.
4.Top cheese toasts with ham; top with caramelised tomatoes then remaining toasts. Serve warm.
