1.Drop beans into medium saucepan of boiling water, return to the boil; drain. When beans are cool enough to handle, peel away grey-coloured outer shells.
2.Cook shallot and speck in heated oiled large frying pan, stirring, until speck is browned lightly. Add beans and thyme; cook, stirring, until beans are heated through. Season to taste.
