1.Combine chicken, herbs, celery, garlic, rind, breadcrumbs, cheese and mayonnaise in medium bowl. Shape rounded tablespoons of mixture into patties; place on baking-paper-lined tray. Freeze 30 minutes.
2.Meanwhile, cut each bacon rasher in half crossways then cut each half into four lengthways strips. Wrap a strip of bacon around each patty; secure with toothpicks.
3.Cook patties in heated oiled large frying pan until browned all over and cooked through. Remove toothpicks before serving.
Uncooked patties can be prepared 1 day ahead; keep, covered, in refrigerator. Uncooked patties can be frozen between layers of freezer wrap for up to 3 months; thaw in refrigerator for 12 hours or overnight before cooking as per recipe.Note
