1.Boil, steam or microwave beans until just tender; drain. Rinse under cold water; drain.
2.Heat oil in large frying pan; cook breadcrumbs, stirring, until crisp. Stir in parsley.
3.Place beans in bowl; sprinkle breadcrumb mixture over top.

Ciabatta or sourdough bread are ideal to use for making breadcrumbs. You can make your own breadcrumbs at home using stale bread. Cut the crusts off, tear into small pieces and place in a food processor. Pulse until you get the size crumb you desire. If your bread isn’t stale, it’s important to dry it out a little before processing or it will clump. Fresh breadcrumbs can be frozen in an airtight container or zip top plastic bag and then thawed for later use.
