Method

1.In medium saucepan of boiling water, cook lentils about 20 minutes or until tender; drain.
2.Meanwhile, in a small bowl, combine chicken, zest, garlic and half the oregano.
3.Lightly spray heated large frying pan with oil. Cook chicken, stirring, until cooked through. Remove chicken from pan; cover.
4.Cook vegetables in same pan with 1 tablespoon of the juice, stirring, until vegetables soften.
5.In a large bowl, combine lentils, chicken, vegetables and spinach with remaining oregano and juice.

800g canned, rinsed, drained brown lentils can be used instead of the green lentils. Add them to the salad in step 5.
