1.Boil, steam or microwave potato and carrot, separately, until tender, drain. Mash potato and carrot in large bowl with half the butter until smooth, cover to keep warm.
2.Heat remaining butter in large frying pan. Cook pork and shallot, uncovered, stirring occasionally, until pork is cooked as desired. Cover to keep warm.
3.Meanwhile, peel, core and thinly slice apples. Combine in medium saucepan with ginger beer and marmalade, bring to a boil. Reduce heat, simmer, uncovered, about 10 minutes or until apple softens.
4.Serve sliced pork with shallot, apple and mash.
