Pork with white bean puree

White bean puree makes a delicious low-carb alternative to traditional mashed potatoes and a delicious side for tender pork cutlets with grilled cherry tomatoes.

1.Brush pork with 2 teaspoons of the oil; cook pork on a heated oiled grill plate (or grill or barbecue) until browned on both sides and just cooked through. Remove from the pan, cover and stand 5 minutes.
2.Meanwhile, brush tomatoes with another 2 teaspoons of the oil; cook on grill plate with pork in batches until browned and tender. Sprinkle with salt and pepper.
3.In a medium saucepan, cover beans in a medium saucepan; bring to the boil, then simmer, uncovered, until beans are heated through. Drain well.
4.Blend or process beans with remaining oil, garlic and juice until smooth; season to taste with salt and pepper.
5.Serve pork with tomatoes, white bean puree and lemon wedges, if desired.

The white bean puree can be made a day ahead.
