Method

1.Place eggplant slices on wire racks, sprinkle with salt, stand 30 minutes. Rinse eggplant, drain on absorbent paper. Cook eggplant, in batches, on heated oiled grill plate until browned both sides.
2.Layer eggplant with remaining ingredients on serving platter, drizzle with three-quarters of the classic Italian dressing. Cover, refrigerate at least 15 minutes or up to 3 hours. Just before serving, drizzle with remaining dressing.
3.Classic Italian Dressing Combine ingredients in screw-top jar; shake well.
