1.Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper. Place tomatoes on tray. Drizzle with vinegar and half the oil. Season.
2.Bake for 15 minutes or until tomatoes just start to collapse. Use scissors to cut trusses into smaller portions.
3.Arrange rocket on a serving platter. Top with tomatoes and drizzle with remaining oil.
Replace trussed cherry tomatoes with regular cherry tomatoes. Scatter over some fresh basil leaves.Note
