Water chestnut salad with fillet of pork

This colourful pork and seafood salad is bursting with exciting flavours and textures.

1.Heat oil in pan, cook pork, turning frequently, until well browned and tender. Remove pork from pan, drain, cool. Cut into 1cm slices, then cut into halves.
2.Cut onions into 6cm strips. Reheat pan, stir-fry garlic and onion for 1 minute; add sauce, juice and sugar, stir-fry until hot; cool.
3.Combine pork, onion mixture, prawns, crab and water chestnuts in bowl, sprinkle with coriander.
