Upside-down beef

Shake things up with this upside-down beef dish from Australian Women's Weekly.

1.Heat 1 tablespoon of the oil in a wok over high heat; stir-fry beef, garlic and ginger until beef is browned all over. Remove from wok; cover to keep warm.
2.Combine cornflour and the water in a small jug.
3.Heat half the remaining oil in wok; stir-fry mushrooms until tender. Return beef to wok with onion, combined sauces, sugar and cornflour mixture; stir-fry until beef is tender and sauce is slightly thickened. Remove from heat; cover to keep warm.
4.Cook rice in microwave oven following packet instructions.
5.Heat the remaining oil in a large frying pan over medium heat; cook eggs until cooked as desired.
6.Place fried eggs, yolk-side down, into two deep 2-cup (500ml) bowls; divide stir-fry and rice evenly between bowls. Press down firmly, but not so hard that the yolk breaks. Cover each bowl with a serving plate, invert onto the plate. Serve with sweet chilli sauce, if you like.

If you prefer not to use the microwave rice, you can boil, steam or microwave ¾ cup (150g) basmati rice for this recipe.
